WINE & FOOD - THE RECIPES
There is no set of rules to match food with wine – it is actually a good idea to follow your taste and be creative in your own personal research for the most intriguing pairings.

Traditional Pairing
a local typical dish is usually paired with a wine from the same area to get well-according scents and flavours.

• Pairings of opposite flavours and of similar flavours.
Opposite: the wine is complementary to the food. For example, a fat tasty dish like traditional bollito is excellent with a Barbera d’Alba because the acidity and freshness of this wine offset the fatness of the food.
Similar: a complex elaborate dish (elaborate because of how it is cooked, number and importance of ingredients) should be paired with a complex structured wine that can better suit the “personality” of the dish.
